Lighten up for Thanksgiving: Pumpkin roll

I don't know about you but I love this time of year. Thanksgiving is all about cooking and spending precious time with family. Gotta love that. So I thought I would help kick off the holiday season by lightening up 4 popular Thanksgiving sides and sweets - two of each, but who's counting.

This week's recipe makeover is for a Pumpkin Roll. This is a traditional holiday dessert in some families. In case you haven't a clue what Pumpkin Roll is - it's a festive, rolled-cake with a moist, pumpkiny cake layer rolled into a log shape with a sweet cream cheese frosting.

It looks like it might be a big undertaking to make this, but it is really easy and fun to make. Serve it cold. This light version of the recipe looks just as fancy and tastes just as delicious even though we cut the egg ...
